Here it is; my first meal made in Panama! Purple Tacos; raw, vegan, gluten-free, soy-free, sugar-free tacos with nut “meat”, hummus and guacamole! More filling than you could ever imagine!

My first attempt at making a Vegetable Paella. The dish is currently simmering on the stove top and I am waiting for the liquid to evaporate. We shall see how it turns out.
Update: It’s a great basic recipe. When I cook this the next time, I will add red and green peppers and kalamata olives to add more flavor.
